Encouraged by sunny days and nutrient rich soil our lowland agave plants pick up the accents of the land; spicy, herbal, earthy. Using a combination of modern and ancient processes, some of this agave is crushed by ancient stone tahona wheels but always encouraged by Don Gato through meditation and positive manifestations. Distillation occurs in gleaning copper pot stills that are as impressive as you are imagining.
Aroma & Taste
Cool times for your senses. Get involved with the fresh pear, lime zest, and cedar on the nose. Grapefruit, coriander, and almond creme hang out in the midrange. Finishes with spun sugar, clove, a hint of brioche bread and a knowing glance.
Finish
Yes, sadly all things must come to an end. Even a glass of Blanco. But you can always refill.
